Ingredients

3 sized bananas or 2 large-sized bananas
1/2 us pint double cream
1 1/2 oz caster sugar
3/4 oz leaf gelatine
1 tbsp warm water
1 wineglassful benedictine or maraschino liqueur
pink food coloring

Steps

Soak the leaf gelatin in the warm water for 5 minutes.
Mash the bananas with the sugar, liqueur, and food coloring until smooth.
Warm 2 tablespoons of the cream in a small saucepan over low heat, then stir in the softened gelatin until dissolved.
Stir the gelatin mixture into the bananas until evenly combined.
Whip the remaining cream until thick, then fold it into the banana mixture.
Pour the mixture into a dish and chill for 30 minutes, until softly set.
