Ingredients

  • 1/2 cup butter (optional)
  • 1 cup white sugar
  • 1 1/2 cups raisins
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/2 cup ground almonds
  • 1 tsp baking soda
  • 1 tbsp hot water
  • 1 cup unsweetened applesauce

Steps

  1. Heat the oven to 350 F and grease a small cake pan with butter or cooking oil.
  2. Cream the butter and sugar in a bowl, if using butter.
  3. Stir in the applesauce, raisins, and hot water.
  4. Whisk the flour, cloves, allspice, cinnamon, ground almonds, and baking soda in another bowl.
  5. Fold the dry mixture into the applesauce mixture until just combined.
  6. Spread the batter in the pan and bake for 40 minutes, until firm in the center.
  7. Cool the cake for 5 minutes before cutting.
