Ingredients

  • 2 1/2 cup unbleached all purpose flour
  • 1 tbsp sugar
  • 2 tsp active dry yeast
  • 1/4 tsp salt
  • 1 1/2 cup milk
  • 2 eggs
  • 1 tbsp salted butter
  • 2 large apples
  • 1/2 cup canola oil (optional)
  • powdered sugar

Steps

  1. Stir the flour, sugar, yeast, salt, milk, and eggs into a thick batter.
  2. Cover the bowl and let the batter rise in a warm place for 60 minutes.
  3. Peel and grate the apples, then fold them into the risen batter.
  4. Heat a thin layer of canola oil in a large skillet over medium heat.
  5. Cook spoonfuls of batter for 3 minutes per side, adding oil as needed, until browned and cooked through.
  6. Dust the pancakes with powdered sugar.
