Ingredients
- 2 tsp olive oil
- 2 sweet potatoes
- 16 oz italian pork or chicken sausage
- 2 cups low sodium chicken broth
- 3/4 cup milk
- 1/4 cup flour
- 3/4 cup shredded gruyere cheese
- 2 cups finely chopped kale
Steps
- Heat the oven to 425 F and coat a 9-by-13-inch baking dish with oil.
- Cut the sweet potatoes into small cubes, spread them in the dish, and roast for 15 minutes.
- Cook the sausage in a large skillet over medium heat for 8 minutes, breaking it apart until it reaches 165 F.
- Whisk the flour and milk into the skillet, then add the broth and cook for 5 minutes until lightly thickened.
- Stir in the kale and half the cheese, then pour the sauce over the sweet potatoes.
- Top with the remaining cheese and bake for 20 minutes, until bubbling and the kale is tender.
