Ingredients
- 1 1/2 lb whole baby potatoes
- 12 oz 4 links chicken sausage
- 2 tbsp avocado oil
- 1 tsp herbs de provence
- salt and pepper to taste (optional)
Steps
- Heat the oven to 425 F and spread the potatoes and artichokes on a large sheet pan.
- Toss the vegetables with avocado oil, herbs de Provence, salt, and pepper.
- Roast the vegetables for 25 minutes.
- Add the chicken sausage links to the pan and turn the vegetables.
- Roast for 15 to 20 minutes more, until the vegetables are tender and the sausage reaches 165 F.
