1/4 cup finely chopped onion
1/2 tsp salt
1/4 tsp pepper
4 tbsp olive oil
1/2 cup pepper jack cheese
1/2 cup crumbled cooked bacon
1/2 cup sour cream
2 green onions

Steps

Mix the hash browns, onion, salt, and pepper in a medium bowl.
Heat 2 tablespoons of oil in a large skillet over medium heat and spread half the potatoes into four rounds.
Cook the potato rounds for 6 minutes, then add the pepper jack, bacon, and green onions.
