Ingredients

  • 9 slices french baguette
  • 1 tbsp extra virgin olive oil
  • 1 1/2 cups diced strawberries
  • 5 fresh basil leaves (optional)
  • 1/2 tsp kosher salt
  • 1 tbsp balsamic vinegar
  • 1 pinch sugar (optional)
  • 1/2 cup whole milk or part skim ricotta cheese
  • balsamic glaze (optional)

Steps

  1. Stir the strawberries, basil, salt, balsamic vinegar, and sugar in a bowl.
  2. Let the strawberry mixture stand for 10 minutes.
  3. Spread ricotta over the baguette slices.
  4. Spoon the strawberry mixture over the ricotta and drizzle with olive oil and balsamic glaze if using.
