Ingredients

1 cup milk
5 tbsp unsalted butter
3 tbsp light brown sugar
2 1/4 tsp instant/rapid-rise yeast
3 cups all-purpose flour
1 tsp fine salt
1/4 cup baking soda
3/4 tsp coarse salt

Steps

Warm the milk and butter in a small saucepan until the butter melts, then stir in the brown sugar and yeast.
Mix the flour and fine salt in a large bowl, add the milk mixture, and knead for 5 minutes.
Cover the dough and let it rest in a warm place for 10 minutes.
Heat the oven to 450 F and bring 8 cups water with the baking soda to a boil in a large pot.
Divide the dough into 6 pieces, roll each into a rope, and shape each rope into a pretzel.
Boil the pretzels for 30 seconds per side, place them on a baking sheet, sprinkle with coarse salt, and bake for 10 to 12 minutes.
