1 1/2 cups warm water
1 tbsp granulated sugar
1 tsp salt
2 1/2 tsp active dry yeast
3 tbsp unsalted butter
3 7/8 cups all-purpose flour
1 beaten egg yolk (optional)
kosher salt
5 cups water
1/3 cup baking soda

Steps

Stir the warm water, sugar, salt, and yeast in a large bowl, then rest it for 5 minutes.
Mix in the melted butter and flour, knead for 8 minutes, and let the covered dough rise for 45 minutes.
Heat the oven to 450 F and bring the 5 cups of water and baking soda to a boil in a large pot.
Divide the dough into 24 pieces, roll them into balls, and boil them in batches for 30 seconds.
