1 lb dried black beans
2 bay leaves
3 tbsp olive oil
1 large white onion
2 jalapeños
3 cloves garlic
1 tbsp chili powder
1 tbsp ground cumin
2 tsp ground coriander

Steps

Rinse the beans and place them in a large pot with enough water to cover by 2 inches.
Add the bay leaves and simmer uncovered for 45 minutes, adding water as needed.
Chop the onion, jalapeños, and garlic while the beans cook.
