Ingredients

  • 250 g / 8 oz canned baby beetroot
  • 120 g / 4 oz baby rocket leaves
  • 60 g feta
  • 3 tbsp walnuts
  • 2 1/2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/2 tsp salt
  • black pepper

Steps

  1. Drain the beetroot and cut it into bite-sized pieces.
  2. Whisk the olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl.
  3. Toss the rocket, beetroot, feta, and walnuts in a serving bowl.
  4. Pour the dressing over the salad and toss gently to coat.
