Ingredients

  • 5 oz baby spinach
  • 5 oz baby arugula
  • 4 oz goat cheese
  • 1 apple
  • 3 cups roasted sweet potatoes
  • 1 1/2 cups candied pecans
  • 3/4 cup orange vinaigrette

Steps

  1. Wash and dry the spinach and arugula, then place them in a large bowl.
  2. Core and thinly slice the apple, then add it to the greens.
  3. Add the roasted sweet potatoes, goat cheese, and candied pecans to the bowl.
  4. Pour in the orange vinaigrette and toss gently until the salad is coated.
  5. Chill the salad for 30 minutes before serving.
