Ingredients
- 8 cups cauliflower florets
- 1/2 red bell pepper
- 1/2 green bell pepper
- 3 tbsp olive oil
- 3 tbsp taco seasoning
- 3 cloves garlic
- salt and black pepper (optional)
- 8 small flour tortillas
- 1 lime
- 3 tbsp chopped fresh cilantro

Steps
- Heat the oven to 425 F and oil a large rimmed baking sheet.
- Toss the cauliflower, sliced peppers, garlic, olive oil, taco seasoning, salt, and pepper on the baking sheet.
- Roast the vegetables for 22 minutes, stirring once, until browned and tender.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side.
- Fill the tortillas with the roasted vegetables and top with lime juice and cilantro.
