Ingredients

  • 4 lb whole chicken
  • 1 lemon
  • 1 orange
  • 1 lime
  • 6 sprigs rosemary
  • 3 1/2 sprigs sage
  • 4 cloves garlic
  • 4 tbsp butter
  • 1 tbsp salt

Steps

  1. Heat the oven to 425 F and place the chicken in a roasting pan.
  2. Rub the chicken with butter and salt, then fill the cavity with the lemon, orange, lime, garlic, rosemary, and sage.
  3. Roast the chicken for about 70 minutes, or until the thickest breast and thigh reach 165 F.
  4. Rest the chicken loosely covered for 10 minutes before carving.
