Ingredients
- 1 extra-overripe banana
- 1/2 cup pumpkin puree
- 1/2 cup sugar
- 6 tbsp unsalted butter
- 1 large egg
- 1/2 tsp pure vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- 3/4 tsp pumpkin pie spice blend
- 1/4 tsp salt
Steps
- Heat the oven to 350 F and grease or line six muffin cups.
- Melt the butter and let it cool for a few minutes.
- Mash the banana in a medium bowl, then whisk in pumpkin, sugar, egg, vanilla, and melted butter.
- Stir flour, baking soda, pumpkin pie spice, and salt into the wet mixture until just combined.
- Divide the batter among the six muffin cups.
- Bake for 18 to 22 minutes, until a toothpick comes out clean.
