Ingredients

  • 2 turkey quarters
  • 1 onion
  • 3 cloves garlic
  • 1 large carrot
  • 1 stalk celery
  • 1 cup unsalted homemade chicken/turkey stock
  • 2 tbsp olive oil
  • 1 dash sherry wine
  • 2 bay leaves
  • 1 pinch dried rosemary
  • 1 pinch dried thyme
  • 1 pinch dried sage
  • kosher salt & ground black pepper to taste (optional)
  • 3 tbsp cornstarch
  • 2 tbsp cold water
  • 4 1/2 yukon gold potatoes
  • 1 oz freshly grated parmesan cheese
  • 1/2 cup milk or cream
  • 1 1/2 tbsp unsalted butter
  • kosher salt and ground black pepper to taste (optional)

Steps

  1. Heat the oil in a 6-quart pressure cooker on sauté mode, brown the turkey quarters for 5 minutes, and remove them.
  2. Cook the onion, garlic, carrot, and celery for 3 minutes, then add the stock, sherry, bay leaves, rosemary, thyme, sage, salt, and pepper.
  3. Return the turkey to the pot, seal the cooker, and cook at high pressure for 25 minutes.
  4. Let the pressure release naturally for 10 minutes, then open the cooker and check that the turkey reaches 165 F.
  5. Remove the turkey, add the potatoes, seal the cooker, and cook at high pressure for 5 minutes before releasing the pressure quickly.
  6. Drain and mash the potatoes with the parmesan, milk, and butter, then simmer the cooking liquid with cornstarch mixed with cold water until thick.
