2 tbsp butter
4 large leeks
6 cups russet potatoes
7 cups chicken or veggie broth
1 cup heavy cream

Steps

Melt the butter in a large pot over medium heat, then cook the sliced leeks for 8 minutes.
Add the potatoes and broth, bring the pot to a boil, and reduce the heat.
Cover the pot and simmer for 25 minutes, until the potatoes are tender.
Blend the soup with an immersion blender until smooth, or carefully blend it in batches.
Check that the thickest part of the poultry reaches 165 F before serving.
