Ingredients

  • 1/2 cup salted butter
  • 6 tbsp granulated white sugar
  • 6 tbsp light brown sugar
  • 1 egg
  • 1/2 tsp pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup kettle brand potato chips - i used the sea salt flavor
  • 1/2 cup old-fashioned oats
  • 1/2 cup chopped pecans
  • 3 1/2 pints ice cream
  • decorate with chocolate hard shell

Steps

  1. Heat the oven to 350 F and line two baking sheets with parchment.
  2. Beat the butter, white sugar, and brown sugar until smooth, then beat in the egg and vanilla.
  3. Stir in the flour, salt, and baking soda, then fold in the chocolate chips, crushed potato chips, oats, and pecans.
  4. Drop eight portions onto the baking sheets and bake for 10 to 12 minutes, until the edges are set.
  5. Cool the cookies completely, then soften the ice cream for 10 minutes.
  6. Sandwich the ice cream between the cookies, coat the tops with chocolate hard shell, and freeze for at least 20 minutes.
