Ingredients

  • 3 cups mashed potatoes
  • 1 cup cheddar cheese
  • 1/3 cup cooked bacon
  • 1/4 cup chives
  • 1/3 cup parmesan cheese
  • 1 1/4 cups panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs
  • vegetable oil for frying (optional)

Steps

  1. Mix the mashed potatoes, cheddar, bacon, chives, and parmesan in a bowl.
  2. Shape the mixture into 24 balls and chill them for 5 minutes.
  3. Put flour, beaten eggs, and panko in three separate shallow bowls.
  4. Coat each ball in flour, egg, and panko.
  5. Heat 1 inch of oil in a deep skillet to 350 F.
  6. Fry the balls in batches for 3 minutes, turning them until golden and heated through.
