1 1/2 tbsp butter
1 cup finely chopped leeks
1 1/2 cups heavy cream
4 large eggs
2 tsp finely chopped fresh thyme

Steps

Heat the oven to 375 F and place the frozen deep-dish pie shell on a baking sheet.
Melt the butter in a skillet over medium heat, add the leeks, and cook for 5 minutes until soft.
Whisk the cream, eggs, thyme, nutmeg, salt, and pepper in a bowl.
