Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1/2 jalapeño
- 1 avocado
- 2 tbsp fresh chopped cilantro
- 1 tbsp freshly squeezed lime juice
- salt and black pepper (optional)
- 2 tbsp everything bagel seasoning
Steps
- Place the eggs in a saucepan, cover them with water, and boil gently for 11 to 12 minutes.
- Cool the eggs in cold water for 5 minutes, then peel and halve them lengthwise.
- Scoop the yolks into a bowl and add the avocado, mayonnaise, jalapeño, cilantro, lime juice, salt, and pepper.
- Mash the filling until creamy, then spoon it into the egg white halves.
- Sprinkle the eggs with everything bagel seasoning and chill for 5 minutes.
