Ingredients

  • 6 oz bittersweet chocolate
  • 3/4 cup unsalted butter
  • 1 1/4 cups powdered sugar
  • 1/8 tsp salt
  • 3 large eggs
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 6 1/2 tbsp unbleached all-purpose flour

Steps

  1. Heat the oven to 425F and grease six 6-ounce ramekins with cooking oil.
  2. Melt the chocolate and butter together in a heatproof bowl until smooth.
  3. Whisk the powdered sugar, salt, eggs, egg yolks, and vanilla in a large bowl.
  4. Stir the melted chocolate mixture into the egg mixture, then fold in the flour.
  5. Divide the batter among the ramekins and place them on a baking sheet.
  6. Bake for 14 to 16 minutes, until the centers reach 160F and are firm.
