- 1 1/2 cups quinoa
- 1 cucumber
- 1 red bell pepper
- 1/2 large red onion
- 1 1/2 cups cherry tomatoes
- 3/4 cup feta cheese
- 3/4 cup kalamata olives
- 1 cup parsley
- 1 batch 5 minute mediterranean salad dressing
Steps
- Rinse the quinoa with cold water and drain it well.
