Steps

Heat the oven to 375 F and grease two 12-cup madeleine pans with clarified butter.
Whisk the eggs, egg yolk, and sugar in a bowl until pale, about 2 minutes.
Whisk in the matcha, flour, and baking powder, then stir in the melted clarified butter and honey.
