Ingredients
- 2 mangoes
- 1 cup sugar
- 1 egg
- 1 cup flour
- 1 tsp baking soda
- 1/4 cup turbinado sugar
Steps
- Heat the oven to 350 F and grease an 8-inch square baking pan with cooking oil.
- Mash the mangoes in a bowl until mostly smooth.
- Whisk the egg and sugar into the mango.
- Stir in the flour and baking soda until just combined.
- Spread the batter in the pan and sprinkle the turbinado sugar over it.
- Bake for 25 minutes, until the center is set, then cool for 5 minutes.
