Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2/3 cup granulated sugar
  • 3 eggs
  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 6 egg yolks
  • 1 1/2 cups water
  • 2 lemons
  • 1 tbsp butter
  • 4 egg whites
  • 1/2 tsp cream of tartar
  • 1/3 cup granulated sugar

Steps

  1. Heat the oven to 350 F and mix the graham crumbs, melted butter, and 2 tablespoons sugar.
  2. Press the crumbs into a 9-inch springform pan and bake for 10 minutes.
  3. Whisk the eggs, egg yolks, sugar, cornstarch, water, lemon juice, lemon zest, and salt in a saucepan.
  4. Cook the filling over medium heat for 8 to 10 minutes, stirring constantly until thick, then stir in 1 tablespoon butter.
  5. Pour the lemon filling into the crust and beat the egg whites with cream of tartar until soft peaks form.
  6. Beat in the remaining sugar until firm peaks form, spread the meringue over the filling, and bake for 10 to 12 minutes.
