2 1/2 lemons
2/3 cup granulated sugar
3 1/2 tbsp cornstarch
4 egg yolks
2 1/3 cups milk
3/4 cup light cream
2 tbsp butter
1 tsp vanilla extract

Steps

Finely grate the zest from 1 lemon and squeeze the juice from 2 1/2 lemons.
Whisk the sugar, cornstarch, egg yolks, lemon zest, and lemon juice in a medium bowl.
Heat the milk and cream in a 2-quart saucepan over medium heat until steaming, about 5 minutes.
Slowly whisk the hot dairy into the egg mixture, then return it to the saucepan.
Cook over medium-low heat for 8 to 10 minutes, whisking constantly, until thick and bubbling.
Remove the pan from the heat, whisk in the butter and vanilla, divide the custard among four dishes, and chill for 2 hours.
