Ingredients

  • 380 g all purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 large egg
  • 150 g brown sugar
  • 250 g beer
  • 1/3 cup milk
  • 1/4 cup honey
  • 4 tbsp unsalted butter
  • 1 tbsp molasses
  • 1 tsp caramelized sugar sauce
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/2 cup dried cherries

Steps

  1. Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with butter.
  2. Whisk the flour, baking powder, cinnamon, and salt in a large bowl.
  3. Beat the egg, brown sugar, beer, milk, honey, molasses, caramelized sugar sauce, vanilla, and melted butter together.
  4. Stir the wet mixture into the flour mixture, then fold in the cranberries, raisins, and cherries.
  5. Pour the batter into the pan and bake for 40 to 45 minutes until firm and the egg is cooked.
