Typical price: Salefork's estimate of an everyday US shelf price for each ingredient. Pick your city to price it from this week's ad.

The amounts listed are small for a full dinner, so this price per serving is likely low. Plan on a side or a bigger portion.

Ingredients

  • 2 tbsp olive oil
  • 2 lb chicken thighs
  • salt and black pepper to taste (optional)
  • 2 cups white onion
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1/2 tsp ground coriander seed
  • 1/4 tsp chili pepper
  • 2 tsp dried parsley
  • 2 tsp dried oregano
  • 28 oz 1 can diced tomatoes
  • 1/2 cup black olives
  • fresh parsley (optional)

Steps

  1. Set a 6-quart Instant Pot to Sauté and heat the olive oil.
  2. Season the chicken with salt and pepper, then brown it for 3 minutes per side.
  3. Add the onion and cook for 4 minutes, then stir in the paprika, onion powder, coriander, chili pepper, parsley, and oregano.
  4. Pour in the tomatoes, scrape the pot, and stir in the olives.
  5. Lock the lid and cook on high pressure for 12 minutes, then let the pressure release naturally for 10 minutes.
  6. Release the remaining pressure, open the pot, and check that the chicken reaches 165 F before adding fresh parsley.
