Ingredients
- 12 oz cremini or button mushrooms
- 4 oz goat cheese
- 2 1/2 oz whipped cream cheese
- 1/2 tbsp fresh parsley
- 1 tbsp fresh chopped scallions or chives
- 1/4 cup italian-seasoned panko (optional)
- extra virgin olive oil (optional)
- sweet balsamic glaze (optional)
Steps
- Heat the oven to 400 F.
- Wipe the mushrooms clean, remove the stems, and arrange the caps in a 9-by-13-inch baking dish.
- Mix the goat cheese, cream cheese, parsley, and scallions in a bowl.
- Fill each mushroom cap with the cheese mixture.
- Sprinkle the breadcrumbs over the filled caps.
- Bake for 15 minutes, until the mushrooms are tender and the tops are lightly browned.
