2 large artichokes
1 tbsp black peppercorns
4 cloves garlic
1 lemon
olive oil
kosher salt and freshly ground black pepper (optional)
1/2 cup butter
2 lemons
2 cloves garlic
1/2 tsp kosher salt
7 fresh thyme

Steps

Heat a grill to medium-high and trim, halve, and remove the chokes from the artichokes.
Boil the artichokes in salted water with peppercorns, four garlic cloves, and lemon halves for 25 minutes.
Melt the butter in a small saucepan with the remaining garlic, lemon juice, salt, and thyme for 5 minutes.
Brush the drained artichokes with olive oil and grill them cut-side down for 6 minutes per side.
Rest the grilled artichokes for 3 minutes, then spoon the warm garlic butter over them.
