Steps

Heat the oven to 425 F and grease a large roasting pan with olive oil.
Cut the potatoes into 1-inch pieces.
Toss the potatoes with the remaining olive oil, garlic, salt, and pepper.
Spread the potatoes in a single layer in the roasting pan.
