Ingredients
- 2 lb zucchini
- 2 tbsp olive oil
- 2 cloves garlic
- 1 1/2 tsp italian seasoning
- 1/2 cup grated parmesan cheese
- salt and freshly ground black pepper
- 2 tbsp finely chopped fresh parsley
Steps
- Heat the oven to 425 F and oil a 9-by-13-inch baking dish.
- Cut the zucchini into thick rounds and mince the garlic.
- Toss the zucchini with olive oil, garlic, Italian seasoning, salt, and pepper.
- Spread the zucchini in the baking dish and sprinkle Parmesan over the top.
- Bake for 25 to 30 minutes, until tender and lightly browned.
- Sprinkle the parsley over the hot zucchini before serving.
