2 lb red potatoes
3 tbsp olive oil
2 tbsp red wine vinegar
1 1/2 tsp dijon mustard
1 shallot
2 tsp chives
2 tsp tarragon
1 tsp parsley
1 tsp chervil
1/2 tsp salt
1/4 tsp ground black pepper

Steps

Cut the red potatoes into 1-inch pieces.
Boil the potatoes in a medium pot of water for 10 to 12 minutes, until tender.
Whisk the olive oil, vinegar, mustard, shallot, chives, tarragon, parsley, chervil, salt, and pepper in a large bowl.
Drain the potatoes well and let them steam for 1 minute.
Toss the warm potatoes with the dressing and serve warm or at room temperature.
