Ingredients

  • 5 tbsp butter
  • 1 tsp salt
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp freshly ground nutmeg
  • 1 cup water
  • 1/2 tsp water
  • 1 cup all-purpose flour
  • 1 cup grated gruyere cheese
  • 5 large eggs

Steps

  1. Heat the oven to 425 F and line a baking sheet with cooking oil or parchment.
  2. Boil the water, butter, salt, pepper, and nutmeg in a medium saucepan over medium heat.
  3. Add the flour all at once and stir for 2 minutes, until the dough pulls from the pan.
  4. Cool the dough for 5 minutes, then beat in the eggs one at a time and stir in the Gruyere.
  5. Drop tablespoonfuls onto the baking sheet and bake for 10 minutes at 425 F.
  6. Lower the oven to 375 F and bake for 12 to 15 minutes, until puffed and golden.
