Ingredients

1/3 cup cornstarch
2 tsp kosher salt
1 tsp baking powder
4 lb chicken wings
oil for deep-fat frying
3/4 cup water
1/2 cup honey
1/4 cup packed brown sugar
2 1/2 tbsp fish sauce
1 tbsp minced garlic
1 tsp coarsely ground pepper
optional: lime wedges

Steps

Whisk the cornstarch, salt, and baking powder in a large bowl.
Toss the wings in the coating until evenly covered.
Heat 2 inches of oil in a deep pot to 350 F.
Fry the wings in batches for 8 to 10 minutes, until crisp and at least 165 F inside.
Simmer the water, honey, brown sugar, fish sauce, garlic, and pepper in a skillet for 5 minutes.
Toss the hot wings in the glaze and serve immediately.
