Ingredients

  • 1 cup dates
  • 1 ripe banana
  • 2 tbsp salted creamy peanut butter
  • 1 cup almond meal
  • 1 cup rolled oats
  • 1/4 scant cup peanut butter chips
  • 1/4 scant cup dairy-free semisweet chocolate chips

Steps

  1. Heat the oven to 350 F and line two baking sheets.
  2. Blend the dates, banana, and peanut butter in a food processor until smooth.
  3. Stir in the almond meal and rolled oats until a thick dough forms.
  4. Fold in the peanut butter chips and chocolate chips.
  5. Scoop 24 portions onto the sheets and flatten them slightly.
  6. Bake for 12 minutes, until the edges look firm.
