Ingredients

1 cup cake flour
3/4 cup plus 2 tablespoons sugar
12 egg whites
1 1/2 tsp cream of tartar
1/4 tsp salt
3/4 cup sugar
6 egg yolks
1 1/2 tsp vanilla extract
1/2 tsp almond extract
1 lemon icing glaze

Steps

Heat the oven to 325 F and prepare a 10-inch tube pan without greasing it.
Beat the egg whites, cream of tartar, and salt until foamy, then gradually beat in 3/4 cup sugar until stiff.
Beat the egg yolks with the remaining sugar, vanilla, and almond extract until thick.
Fold the cake flour into the yolk mixture, then gently fold that mixture into the egg whites.
Pour the batter into the tube pan and bake for 40 minutes, until the cake springs back when pressed.
Cool the cake upside down for 10 minutes, then turn it out and spread it with the lemon icing glaze.
