Ingredients

2 lb shrimp
1/2 cup cornstarch
3/4 tsp salt
1/2 tsp cayenne pepper
3 large egg whites
2 1/2 tbsp sugar
vegetable oil (optional)
thai sweet red chili sauce

Steps

Pat the shrimp dry and season them with salt and cayenne pepper.
Whisk the egg whites in a shallow bowl until lightly foamy.
Place the cornstarch in one bowl and mix the coconut with sugar in another.
Coat each shrimp in cornstarch, dip it into egg whites, and press on the coconut mixture.
Heat one-half inch of cooking oil in a large skillet over medium heat.
Fry the shrimp for 2 to 3 minutes per side, until crisp and cooked to 145 F, then serve with sweet red chili sauce.
