1 tbsp sunflower oil
1 onion finely chopped
700 g courgette
2 cloves garlic crushed
250 g tub ricotta
50 g cheddar
350 g jar tomato sauce for pasta

Steps

Heat the oven to 350 F and boil the lasagne sheets in salted water for 5 minutes.
Heat the sunflower oil in a large skillet and cook the onion, courgette, and garlic for 8 minutes.
Stir the ricotta into the courgette mixture.
Spread some tomato sauce in a 9-by-13-inch baking dish, then layer pasta, courgette mixture, and sauce three times.
Top the lasagne with the cheddar and bake for 15 minutes until bubbling.
