8 oz bucatini or spaghetti
2 tsp kosher salt
2 tbsp extra virgin olive oil
2 tbsp butter
2 tsp fresh
3/4 cup finely grated parmesan cheese or romano cheese
1 tbsp finely chopped parsley

Steps

Boil a large pot of water, add the kosher salt, and cook the bucatini for 8 to 10 minutes until tender.
Reserve 1 cup of pasta water, then drain the bucatini.
Warm the olive oil and butter in a large skillet over medium heat for 1 minute.
Add the pasta and 1/2 cup pasta water, then toss for 2 minutes.
Remove the skillet from the heat and stir in the grated cheese until smooth, adding more pasta water as needed.
Stir in the parsley and serve hot.
