Ingredients

  • 1 2/3 cups very ripe bananas
  • 1 cup almond flour
  • 1/3 cup coconut flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp butter
  • 1/3 cup unpacked brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 oz reduced fat cream cheese

Steps

  1. Heat the oven to 350 F and grease a 12-cup muffin pan with cooking oil.
  2. Melt the butter, then stir it with the bananas, brown sugar, eggs, and vanilla.
  3. Whisk the almond flour, coconut flour, baking powder, baking soda, and salt into the banana mixture.
  4. Spoon half the batter into the muffin cups, add the cream cheese, and cover with the remaining batter.
  5. Bake for 25 minutes, until the tops are set and the centers reach 165 F.
  6. Cool the muffins in the pan for 10 minutes.
