1 lb corned beef
1 1/2 cup kidney beans
1 scotch bonnet
2 scallions
1/4 tsp thyme
1 clove finely chopped garlic
2 cups water
3 cups coconut milk
2 bay leaf
6 allspice
2 cloves garlic

Steps

Cut the corned beef into bite-size pieces and place it in a large pot.
Add the water, coconut milk, bay leaves, allspice, both garlic cloves, thyme, and the whole scotch bonnet.
Bring the pot to a gentle boil, then simmer uncovered for 25 minutes.
