Ingredients

  • 8 tomatoes
  • 1/2 cup cooked brown rice
  • 1/2 cup fresh sweet corn
  • 1 clove garlic
  • 1 handful fresh basil ribbons
  • salt and pepper to taste (optional)
  • grated cheese

Steps

  1. Heat the oven to 400 F.
  2. Cut the tops from 8 tomatoes and scoop out their centers.
  3. Mix the rice, corn, minced garlic, basil, salt, and pepper in a bowl.
  4. Fill the tomatoes with the rice mixture and top them with grated cheese.
  5. Bake the tomatoes in a baking dish for 10 minutes, until tender and hot.
