  • 24 pieces chocolate sandwich cookies include creamy centers
  • 4 tbsp unsalted butter
  • 4 packages (32 oz) cream cheese
  • 1 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 1 tbsp vanilla extract
  • 4 large eggs
  • 16 pieces whole chocolate sandwich cookies
  • 8 pieces chocolate sandwich cookies
  • 1 1/2 tbsp water
  • 1 1/8 tsp unflavored powdered gelatin
  • 1 cup white chocolate chips
  • 1 1/4 cups heavy cream
  • 1/4 cup powdered sugar
  • 10 chocolate sandwich cookies
  • 1 cup dark or semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 10 pieces whole chocolate sandwich cookies (optional)

Steps

  1. Heat the oven to 325 F, crush 24 cookies, mix them with melted butter, and press them into a 9-inch springform pan.
  2. Beat the cream cheese, granulated sugar, flour, and vanilla until smooth, then beat in the eggs and fold in 16 chopped cookies.
  3. Spread the filling over the crust and bake for 60 minutes, until the center reaches 160 F.
  4. Cool the cheesecake for 30 minutes, then chill it for 3 1/2 hours.
  5. Bloom the gelatin in the water for 5 minutes, melt it with the white chocolate and 1/4 cup heavy cream, and cool the mixture slightly.
  6. Whip the remaining heavy cream with powdered sugar, fold in the white chocolate mixture, spread it over the cheesecake, and top with crushed cookies.
