1 tsp vanilla extract
1/2 tsp coconut extract
1/2 cup coconut sugar
1/4 cup unsweetened shredded coconut

Steps

Whisk the coconut milk, coffee, coconut sugar, vanilla, and coconut extract in a saucepan.
Heat the mixture over medium-low heat for 5 minutes, stirring until the sugar dissolves.
Cool the mixture for 20 minutes, then stir in the shredded coconut.
Pour the mixture into a shallow freezer-safe pan and freeze for 2 hours.
Stir the partially frozen mixture vigorously, then freeze it for 4 more hours.
