Ingredients

  • 1 cup coconut flour
  • 1/4 tsp baking soda
  • 1 pinch sea salt
  • 1/3 cup coconut flakes
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/3 cup chocolate chips (optional)

Steps

  1. Heat the oven to 350 F and line a large baking sheet.
  2. Whisk the coconut flour, baking soda, salt, and coconut flakes in a bowl.
  3. Whisk the eggs, melted butter, maple syrup, and vanilla in a second bowl.
  4. Stir the wet mixture into the dry mixture; fold in the chocolate chips.
  5. Rest the dough for 5 minutes.
  6. Scoop 20 portions onto the baking sheet; bake for 10 to 12 minutes, until set.
