Ingredients
- 4 tbsp unsalted butter
- 1/2 large yellow sweet onion
- 1 can (28 oz) whole tomatoes
- 2 cups chicken stock
- 2 cloves garlic
- 1 tsp kosher salt
- 1 pinch sugar
- optional toppings grated parmesan
Steps
- Melt the butter in a large pot over medium heat.
- Add the chopped onion and cook for 6 minutes until soft.
- Stir in the garlic and cook for 1 minute.
- Add the tomatoes, chicken stock, salt, and sugar, then simmer uncovered for 25 minutes.
