Ingredients

  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2/3 cup natural unsweetened cocoa powder
  • 1 1/4 cups light brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet or bittersweet chocolate chips
  • 1/2 cup unsalted butter

Steps

  1. Heat the oven to 375 F and line a 12-cup muffin pan.
  2. Melt the butter and let it cool for 5 minutes.
  3. Whisk the eggs, vanilla extract, brown sugar, and melted butter in a large bowl.
  4. Stir the flour, cocoa powder, baking powder, baking soda, and salt into the wet mixture.
  5. Fold in the chocolate chips, divide the batter among the cups, and bake for 18 to 20 minutes.
  6. Cool the muffins in the pan for 5 minutes.
