Ingredients
- 1 can (15 oz) cooked chickpeas
- 2 cloves garlic
- 1/4 cup tahini
- 1/2 whole lime
- 1/4 fresh cilantro leaves
- 1 tsp fajita seasoning
- kosher salt & ground black pepper
- optional toppings: extra virgin olive oil
- optional garnish: pico de gallo
- optional for serving: pita chips
Steps
- Drain and rinse the chickpeas, then squeeze the lime to collect its juice.
- Add the chickpeas, tahini, lime juice, garlic, roasted pepper, chipotle, cilantro, and fajita seasoning to a food processor.
- Blend for 2 minutes, scraping the sides once, until smooth.
- Season with salt and pepper, then blend for 30 seconds more.
- Transfer the hummus to a bowl and rest it for 5 minutes before serving.
